How any of these developers can call themselves engineers and still look themselves in the mirror is beyond me. An engineer's job is to design the most efficient structure in as little time, and cheap manner as possible that still produce a reasonable and satisfactory result. What all modern web apps have in common is that they cut all corners on development time prior to release to then be forced to optimize the hell out of the mess afterwards in perpetuity. A simple tech stack would accomplish the same tasks with minimal extra initial development time and effort, but would remain performant for a very long time.

What you said can also be true with a modern linux or bsd install. Use something like arch linux or nixos and only install the bare bones like a windows manager, text editor, irc client and a web browser. You'll have no notifications, it's all up to you and you'll also have an updated and secure machine.

Sorry, but that's not any excuses for you not to start learning! Looks like your problem is procrastination which we all struggle with. Old age is also not as bad we're lead to believe for learning. It's all about getting into the habit of studying. That can come after an idea that turns into a goal and is kept in motion by brute force will. It's bold of the Nintendo family to make such statements about Japanese society when they can't even get their own company under control themselves. Nintendo is probably the most universally hated gaming company and it's true of other Japanese companies as well. They seem to be scared of the internet and goes out of their way to claim copyright infringement on anything fan made having to do with their intellectual property. They will try take down everything they possibly can, it's so bad you have to fear covering any of their games, even their music on platforms such as YouTube. Any efforts to preserve old Nintendo games via e.g. emulation is quickly met with a lawsuit. Whether or not you comply with their requests they will try to sue you for millions, even children. Things work differently on Linux. The software is supposed to respect Unix philosophy and standards. So it should matter what combination of packages you run. They're not supposed to be tightly integrated, the gnome team seems to have forgotten all of this. As for managing displays, it has become much better with wayland and it's improving fast.
