There's always the option to use a NextCloud Collabora instance. Keep in mind that the French maybe choose to do so in a centralized manner since most educational facilities are state owned.

LibreOffice or pay for development of your own FOSS equivalent. Enough piggybacking on proprietary tech with tax payer money.
