Those issues are typically from the decoding libraries you choose. Which could even be ffmpeg if you wish. GStreamer just provides a nice high level API.

Youtube artificially limits the resolution, on mine if you cast the exact same video it doesn’t impose that limit and works fine.
While iOS doesn’t do this at the OS level I’ve never seen an app that didn’t have these options. I assumed it’s required by Apple.

This oversimplifies reality. Fedora has a community and actively makes decisions RHEL has no interest in. But yes they also help with testing many things.

In my personal experience macOS is fine but updates are often buggy or regress performance. Linux has just been the more polished option. Plus it just has a nicer desktop and apps.

Linux has good support for m1 and m2, so for newer devices running a custom desktop would be neat.

“It works” is the bare minimum. Software is maintained for decades and should have a higher bar of quality.
