Any tips on how to migrate a very large ASP.NET MVC app (framework 4.8), that is still in active development, with tens of thousands of users, without a complete feature-freeze? Am I able to migrate to .NET 7 in small increments over a long period?

I sold a SaaS that was making around that amount in ARR. I used an M&A firm that was specialized in selling bootstrapped SaaS businesses. We ended up getting more than 10 offers which drove up the final price and allowed me to choose the best fit. I would have never been able to go through the process alone and get the multiples that we got offered.
I'm seeing some errors in my applications, but most requests are still working somehow.

We are doing 200k+ in MRR and looking to move from Stripe because the cost is starting to hurt, and this change feels unfair. Our use-case is pretty simple (capture card and manage subscriptions) and we don't need all the features they have built in the last 5 years or are planing to build.
We are looking into Spreedly. Does anyone have other suggestions of Stripe alternatives that are not so expensive?

I'm not sure if you are being serious. Approximately 3% of the US population claim to be 100% plant-based, and you are saying that this 3% is responsible for most part of diseases?
I practically stopped having headaches once I started using blue light blocking glasses. Not only at night, but when I first wake up too, specially if it's still dark.
I'm sure there are very rare exceptions, but if it's a simple product and it only takes 2 weeks to build it, it probably won't add that much value. If it does, the market is, or will be, saturated with competitors due to the low barrier to entry.

I was using Google Places' address auto-complete on a CRM, and most users loved it. Chrome's behavior completely broke this functionality by overlaying their auto-fill on top of Google Places suggestions, with no sane way to disable it. We decided to stop using address auto-complete and force our customers to type the address fields instead.
Ironically, we were paying Google a few thousand dollars per month for this, so they are not getting our revenue as a direct consequence of Chrome's behavior.

It looks like you are actively looking for data that makes you feel good about your habits and suspending critical thinking. The amount of evidence for the negative impact of the animal industry on the environment is staggering.
Since I believe that being vegan is usually the most impactful thing an individual can do, and I don't have the skills necessary to encourage other people to go vegan, I donate money to people who are good on doing that. It's amazing to me how someone can (almost) exclusively eat vegetables and enjoy it.
I think this is a common misconception. Vegans don't eat only vegetables, they eat every type of food, except animal products. It's very likely that most of the dishes you enjoy have a vegan version that tastes great. If you live near a big city, try out some of the vegan restaurants to see what chefs are able to do nowadays.
Also, tastebuds change and you'll eventually get the same steak dopamine hit by eating something else. I, for instance, used to hate Indian food, and now Chana Masala is one of my favourite dishes.

That's not a logical way to think about things. When I go out for a run, I don't think "I have to run every day for the rest of my life otherwise it's worth going". I don't think anyone would ever exercise if they followed that logic.

Because more people are becoming aware of the negative environmental impact of raising animals for food, or questioning the ethical implications. When meat analogs become cheaper and taste the same as meat, it's likely that it will become the norm. BYND seems to be well positioned to dominate this market.
The small bare metal hosting company I use for some projects hardly goes down, and when there is an issue, I can actually get a human being on the phone in 2 minutes. Plus, a bare metal server with tons of RAM costs less than a small VM on the big cloud providers.

You can try to use some common sense. The risk of a security researcher finding out about it, or of a whistleblower coming out is too high. Something like that would not pass a risk-benefit analysis in any stretch of the imagination, specially for a company that already collects huge amounts of data from their users.
