What a fantastic almost too good to be true breakthrough.

Yup, "too good to be true" seems to pretty much sum it up unless some technical details reveal themselves.

I just spent half an hour attempting to find out about the company founders and the ground breaking technology they tout.

A big zero basically, some info about one of the sisters who has two BS Degrees and seems to have done a lot of science fair "research" in non company related areas.

Other than the one mention of "cell-free enzymatic synthesis", I didn't notice a single word on the website nor any explanatory attachments about their amazing technology.

I did a DD-Go search and found this paper, but not sure if this is the technology they are referring to: "Cell-free chemoenzymatic starch synthesis from carbon dioxide".

If this is their starting point they could be a decade away from manufacturing production quantities of fabric "from" Co2.

Reviewing the two job listings on the website for a Founding Bioengineer and a Founding Process Innovation Engineer, it looks like they are at ground zero without a clue about scaling up the technology and want the new employees to carry the research weight.

Yes, I'm extremely skeptical about their bold claims.

This so much reminds me of Theranos, how can this not be a scam?

I dunno. To me they just look like any of 1000 Valley startups that make optimistic promises. Nothing stands out as any more wild than is typical. They'll do something interesting or they won't.

They raised money from VCs who are supposedly responsible adults, so it's on them.

If they utterly fail, they utterly fail. It's a thing that happens.
