Why should they? The judge ruled that Epic deliberately violated their contract and must pay for it. Epic is clearly a hostile actor who is acting against Apple.

There is no reason for Apple to trust Epic ever again, and no reason for them to do anything except what the law requires.

I'd say that Apple's position is bad for Apple's business. Bit their nose off to spite their face as it were.

Makes perfect sense. Why would I in any way aid someone who is actively and openly working to subvert me? (What I do and why they are doing it is irrelevant to this simple question.)

Epic just loves to continue to dig themselves into a larger hole and make it worse for themselves.

Apple doesn't care and they shouldn't care given how Epic is behaving like a sore loser after the result of the trial and they still failed to get back on the App Store. Now it will take them years rather than 90 days.

An Epic failure.
