We don't eat swans 12 years ago
We shot a swan for the sole purpose of eating it. It was lovely and served a large number of people (apx 8) with plenty of leftovers.
This was in a country where they are protected but are a pest and are in large numbers locally. Protected largely for historical reasons (the Queen).
In future I would (will) use the pressure cooker however.
