Ask HN: How are leading AI firms doing IT?

I'm a data-science/ML person who's never worked directly with IT before. I am now working within an IT organization and and learning all sorts of new concepts and ways to think about and do things.

Is there any insight in to how companies like DeepMind, OpenAI, Midjourney, etc, manage IT? Do they follow standards like ITIL? Are they rolling their own procedures?
